An ohitsu is a wooden container in which cooked rice is stored. The Kanto style ohitsu has a lid that fits over the top of the container, where the Kansai style sits on top.
The sawara wood from which it is made regulates the moisture and temperature of the rice, keeping it in perfect condition.
Due to Sawara's tolerance for acidity, the ohitsu is most often found in sushi restaurants, where it is used to hold the vinegared rice on the counter.
Before first use, fill the ohitsu with hot water, then add half a cup of vinegar and let the water cool down naturally. Then rinse well with warm water.
Before every use, moisten slightly with water.
After use, wash with warm water and dry with a dishcloth. Allow it to air dry in a well-ventilated place before storing.
